My Favorite Recipe

One of the things I love to do when I’m not writing is to cook. I love trying new recipes, and I’m fortunate to have a husband who will try about anything at least once. A favorite place to get easy weeknight meals is from Publix’s Apron’s Simple Meals. One in particular was so good it has become our favorite. It’s so easy, but absolutely delicious.
Pub-style Chicken and Caramelized Onions
3 oz. reduced-fat jalapeƱo Cheddar cheese, shredded
¼ cup light soy sauce
1 Tablespoon molasses
1 Tablespoon garlic powder
¾ teaspoon pepper, divided
Large zip-top bag
1 ½ boneless, skinless chicken breasts
4 cups sliced onions
1 tablespoon canola oil
¼ teaspoon kosher salt
2/3 cup French’s Fried Onions
¼ cup Caesar dressing
¼ cup light honey mustard dressing

Pub-style Chicken and Caramelized Onions

Large zip-top bag
1 ½ boneless, skinless chicken breasts
4 cups sliced onions
1 tablespoon canola oil
¼ teaspoon kosher salt
2/3 cup French’s Fried Onions
¼ cup Caesar dressing
¼ cup light honey mustard dressing
Preheat oven to 425°F.
Combine soy sauce, molasses, garlic powder, and ½ teaspoon pepper; place mixture in bag and add chicken, turning to coat. Let stand for at least ten minutes (or overnight) to marinate.
Toss onions with oil, salt, and remaining ¼ teaspoon of pepper. Place onions in 13 X 9-inch baking dish; top with chicken. Bake 20-25 minutes or until chicken reaches 165°F.
Top chicken with crispy onions and cheese; bake 2-3 more minutes or until cheese melts.
Combine both dressings; microwave on HIGH 20-30 seconds or until hot. Drizzle sauce over chicken and serve.

Kat has been an avid reader her entire life. She enjoys all genres, but particularly Mystery and Young Adult. Mary Higgins Clark is one of her favorite authors who inspired her love of mysteries.
When she isn't writing, Kat loves to travel, try out new recipes and hang out with her husband. She is originally from Kentucky, but currently resides in South Georgia with her husband, a cat named Frank and a dog named Lil.
